Creamy Sausage and Kale Orzo

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a spoon, until fully browned, about 5-7 minutes. Drain any excess fat.

Add the diced onion to the skillet with the cooked sausage and cook until softened, about 3-4 minutes. Stir in the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
