Easy General Tso's Chicken

Pat chicken thighs dry and cut them into 1-inch bite-sized pieces. In a medium bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of cornstarch. Add the chicken pieces and toss to coat. Let marinate for 10-15 minutes.

In a shallow dish, whisk together the remaining 1/2 cup cornstarch, all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Dredge each marinated chicken piece in the mixture, ensuring it's fully coated. Shake off any excess coating.

Heat 2 cups of vegetable oil in a large heavy-bottomed pot or deep skillet over medium-high heat until it reaches 350-375°F (175-190°C). Fry the coated chicken in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes per batch, or until golden brown and cooked through. Remove the chicken with a slotted spoon and place it on a wire rack set over a paper towel-lined plate to drain.

In a medium bowl, whisk together the remaining 1/4 cup soy sauce, remaining 1/4 cup rice vinegar, granulated sugar, hoisin sauce, grated ginger, minced garlic, red pepper flakes, and chicken broth. In a separate small bowl, whisk 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry.

Carefully remove all but 1 tablespoon of oil from the pot used for frying (or use a clean pan). Pour in the prepared sauce mixture and bring it to a simmer over medium heat, stirring occasionally. Once simmering, slowly whisk in the cornstarch slurry. Continue to cook and stir until the sauce thickens to your desired consistency, about 1-2 minutes.
