1Ingredients

  • 1 poundGround Beef (80/20)
  • 8 countFlour Tortillas (10-inch)
  • 2 cupsShredded Cheese (Cheddar or Mexican Blend)
  • 1 countSmall Onion, diced
  • 1 countBell Pepper (any color), diced
  • 2 tablespoonsTaco Seasoning
  • 1 tablespoonOlive Oil (or vegetable oil)
  • 0.3 cupWater (if seasoning packet directs)

2Instructions

  1. 1

Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper and cook for 3-5 minutes, stirring occasionally, until they begin to soften.

  2. 2

Add the ground beef to the skillet with the vegetables. Break the beef apart with a spoon and cook until it is fully browned, about 6-8 minutes. Drain any excess fat from the skillet.

  3. 3

Stir the taco seasoning into the browned beef and vegetable mixture. If your seasoning packet directs, add 1/4 cup of water and cook for another 1-2 minutes until the liquid has absorbed and the beef is well coated. Remove the beef mixture from the skillet and set aside.

    2 min
  4. 4

Wipe the skillet clean (or use a separate non-stick pan) and place it over medium heat. Lay one flour tortilla flat in the dry skillet. Sprinkle about 1/4 cup of shredded cheese over one half of the tortilla.

    1 min
  5. 5

Spoon about 1/4 cup of the seasoned beef mixture onto the same cheesy half of the tortilla. Top the beef with another 1/4 cup of shredded cheese. Fold the empty half of the tortilla over the filled half to create a crescent shape.

    1 min
  6. 6

Cook the folded quesadilla for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and crispy, and the cheese is completely melted and bubbly. Carefully transfer the cooked quesadilla to a cutting board.

    6 min
  7. 7

Repeat steps 4-6 with the remaining tortillas, cheese, and beef filling. Once all quesadillas are cooked, cut each into 2 or 3 wedges. Serve immediately with your favorite toppings like salsa, sour cream, or guacamole.
