Simple Spinach and Feta Omelette

In a medium bowl, whisk together the eggs, milk (or water), salt, and black pepper until well combined and slightly frothy. Set aside.

Wash the spinach thoroughly and gently pat dry. If using larger leaves, roughly chop them.

Heat 1/2 tablespoon of olive oil or butter in a 10-inch non-stick skillet over medium heat. Add about a quarter of the spinach and sauté for 1-2 minutes, until wilted. Remove spinach from the pan and set aside.

Add another 1/2 tablespoon of oil to the same skillet. Pour about a quarter of the egg mixture into the hot pan, tilting to evenly coat the bottom. Cook for 1-2 minutes until the edges begin to set.

Sprinkle about a quarter of the cooked spinach and a quarter of the crumbled feta cheese over one half of the omelette. Continue to cook for another 1-2 minutes, or until the eggs are mostly set but still slightly moist on top.

Carefully fold the plain half of the omelette over the filling. Cook for an additional 30 seconds to 1 minute, then slide the omelette onto a plate. Repeat steps 3-6 to make the remaining three omelettes, adding more oil or butter as needed.
