Easy One-Pan Chicken Enchilada Bake

Preheat your oven to 375 F (190 C). Heat the olive oil in a large oven-safe skillet over medium heat. Add the chopped yellow onion and cook until softened, about 3-5 minutes.

Stir in the shredded cooked chicken, rinsed black beans, drained corn, and undrained diced green chiles. Pour in about half of the enchilada sauce and stir well to combine all ingredients.

Gently fold the torn corn tortillas into the chicken mixture in the skillet until they are evenly distributed and coated.
